Did you see that title…you were intrigued weren’t you?  LOL.  Well, it is the heartiest, and easiest vegetable soup you’ll ever make – honestly.  The trick is you jump start the soup with two cans of hearty vegetable soup.  Any brand will do.  I have used Campbell’s Thick and Chunky and Amy’s Vegetable soup and both were equally delicious!

It has just a little kick to it – its the can of diced tomatoes with green chiles (otherwise known as Rotele – but store brand will do too).

Make this as soon as the weather turns chilly and I promise you won’t be disappointed!  I’ve served this to lots of folks with a big ol’ pan of homemade cornbread and they always come away full and happy!

Lazy Mama’s Vegetable Soup

1 lb. of grass-fed ground beef
1 onion, chopped
2 (19 oz) cans hearty vegetable soup
1 (14.5 oz.) can diced tomatoes
1 (11 oz.) can whole kernel corn OR white shoepeg corn
1 (10 oz) can diced tomatoes with green chiles

In a large skillet combine the ground beef and onion. Cook until beef is browned and crumbled and onions are opaque. Drain well. (I sometimes rinse mine in a colander). Add all ingredients including the cooked beef to a slow cooker and cover. Cover and cook on high for 4 hours.  This makes about 6 big servings.
