So if you’ve been following her for a while you know that I am participating in a program to help Walmart spread the word that they are doing something new to help moms (and dads) find quick meal solutions for their families.   Each week they feature certain ingredients to grab and go so that you can pick them up and cook up some dinner without any planning at all.  I’ll let you in on the ingredients and what Walmart suggests you make this week…and I’ll share my tips on how to spice it up and make it WHOLESOME! Here’s what they’re offering this week:

When I am meal planning, you can bet that once the leaves start falling soups and stews are going to be playing a starring role.  I LOVE soup!  I have several good (and quick) recipes I’ll be sharing in the coming weeks!  Canned soup usually isn’t doesn’t make an appearance at my dinner table (except in the way of creamed soups in casseroles and gravies) but I do love it for lunch!

So what would I do with these ingredients?  I love tomato soup and grilled cheese – and it is easy to see that you could whip up a quick and soul-warming bowl full of Campbell’s soup grilled cheeses all around in less than 10 minutes flat!  One of my favourite lunchtime varieties is Campbell’s Creamy Tomato (soup at hand) but I can’t find it in a regular can!~  So, today I made my own!  Here’s what I did:

Heat the Campbell’s Tomato Soup as directed on the can but only add 3/4 of a can of water.  Once the soup is heated through, add about a 1/4 to 1/2 cup of organic half and a half (heavy cream would be good too).

What about the grilled cheese?

I LOVE fresh/wet mozzarella!   You know, the kind that comes in a ball.  It has a creamy, buttery taste that you can’t get from the dry block or shredded kind. It is so delicious on a piece of french bread I ALWAYS make it like this instead of regular grilled cheeses because we love them so much.
Here’s what you do:

Preheat the oven to 400.  Slice the mozzarella and the french bread into slices.  Lay one slice of mozzarella on each slice of bread. Bake for about 8 minutes.  Then, turn the oven up to broil on high.  Keep your eye on it.  When the mozzarella turns brown in places and bubbly (like you see on a pizza) it is done!  It happens quickly so really, stand there and watch it!

There are lots of other ways to jazz up tomato soup.  You can add sour cream and/or shredded cheese, you can add salsa or chopped tomatoes.  However, your kids are sure to love fishing for Goldfish crackers in their tomato soup…I know Judah does! =)
