With summers end very near I am thinking about all the delicious yellow squash I will be missing!  If you get an opportunity to snag some of those delicious yellow squash before they are all gone you’ll have to try this recipe.  It is a family favourite of ours.

Squash Casserole

3 cups of cooked squash
2 cups of crushed crackers (any type will do – soda crackers, ritz)
1 cup of grated cheese
3/4 stick of melted butter
3 eggs
1 cup of onion, chopped
1 cup milk
salt and pepper

Preheat oven to 400 degrees. Mix all the ingredients in a bowl and then pour them into a greased casserole dish. Bake for 40 minutes.
